At the heart of every piece of nigiri lies sushi rice.
We believe shari is the defining element of harmony in sushi.

Seasoned with a carefully balanced blend of Japanese red vinegar and cooked fresh on-site for your Omakase, each grain is prepared with intention.

Throughout the service, we adjust its temperature to ensure every piece is presented at its optimal state, preserving the delicate balance between rice and topping.

We are committed to using Japanese Hon-Wasabi, freshly grated just before your Omakase begins. This allows you to experience its refined aroma, gentle heat, and clean, elegant finish.

We highly recommend pairing our Edomae Sushi Omakase with fine Japanese sake.
Delicate yet expressive, it enhances the subtle flavors of the sushi without overshadowing them, creating seamless harmony through the finish and inviting a lingering aftertaste. 
The pairing elevates the entire course into a more refined and immersive experience.
